Green Lentils

Lentils are often overlooked, even though they’re an inexpensive way of getting a wide range of nutrients. For example, they’re packed with B vitamins, magnesium, zinc and potassium. Lentils are made up of over 25% protein, which makes them an excellent meat alternative. They’re also a great source of iron, a mineral that is sometimes lacking in vegetarian diets. These round, oval or heart-shaped disks are small, oftentimes smaller than the tip of a pencil eraser. Green lentils are known for retaining their shape after cooking and feature a hearty dense somewhat nutty flavor. Lentil salads come in all shapes and sizes, which means there is bound to be one that fits your current mood. If you’re craving something light, make a cool lentil salad with a simple vinaigrette; if you’re feeling like something more comforting, churn out a warm lentil salad and add bacon to the situation. In addition to salads, whether it’s something as simple as spiced lentils topped with a fried egg or a little more dressed up like a lentil curry, lentils are bowl food at its best. Lastly, lentils can take the place of ground meat in casseroles and pies, thanks to their hearty texture, but can also make a nice bed for actual meat if you’re more inclined. Overall, lentils can offer so much and sometimes the sayings true, less is more!
