Ingredients
- 12 oz Mountain High Organics Gluten-Free Linguine
- 2 lbs fresh littleneck clams, scrubbed
- 3 tbsp extra virgin olive oil
- 4 cloves garlic, thinly sliced
- ½ tsp red pepper flakes (optional)
- ½ cup dry white wine
- Juice of ½ lemon
- ¼ cup chopped fresh parsley
- Salt and freshly cracked black pepper to taste
Instructions
1. Cook the Linguine:
Bring a large pot of salted water to a boil. Cook the Mountain High Organics Gluten-Free Linguine until al dente according to the package directions. Reserve ½ cup of pasta water, then drain and set aside.
2. Prepare the Clams:
While the pasta cooks, heat olive oil in a large, deep skillet over medium heat. Add the garlic and red pepper flakes, sautéing for 1–2 minutes until fragrant but not browned.
3. Add Wine & Clams:
Pour in the white wine and bring to a simmer. Add the clams, cover the pan, and let them steam for 6–8 minutes, or until all the clams open. Discard any that don’t open.
4. Combine & Finish:
Add the cooked linguine to the skillet with the clams. Toss gently to combine. Add lemon juice, a splash of reserved pasta water (as needed for moisture), and season with salt and black pepper. Stir in chopped parsley.
5. Serve:
Divide among plates and serve immediately with crusty gluten-free bread or a simple green salad.
