Ingredients
- 1½ cups Mountain High Organics Gluten-Free Orzo Pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 3 cups fresh spinach
- ¼ cup chopped fresh basil
- ¼ tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Freshly grated Parmesan (optional)
Instructions
1. Cook the Orzo:
Bring a large pot of salted water to a boil. Add Mountain High Organics Orzo Pasta and cook according to package instructions until al dente. Drain and set aside.
2. Sauté the Garlic & Tomatoes:
In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and cook for 4–5 minutes, until they soften and begin to burst.
3. Add the Spinach:
Stir in fresh spinach and cook for another 2–3 minutes until wilted.
4. Combine & Season:
Add the cooked orzo to the skillet. Toss everything together. Season with salt, pepper, and red pepper flakes (if using). Stir in fresh basil just before serving.
5. Serve:
Plate warm and top with grated Parmesan if desired. Enjoy as a light main dish or as a flavorful side.
