Golden / Yellow Lentils

Golden Lentils are the tiny, lens shaped seed of a small shrub. Many countries enjoy lentils as a dietary staple, as they offer an earthy, mild, nutty flavor that works well in various recipes. Canada leads the world’s production of lentils, followed by India. Golden Lentils are smaller and rounder. Yellow or golden lentils are the most popular legume in India, and are known there as Channa Dal. Yellow lentils have a sweet and nutty flavor. In addition, lentils are made up of over 25% protein, which makes them an excellent meat alternative. They’re also a great source of iron, a mineral that is sometimes lacking in vegetarian diets. Also, they are tasty, robust and very versatile! If you are thinking of something to pair with, golden/yellow lentils play a great sidekick to – pumpkin, squash, zucchini and carrots!
